JIN Malatang is a malatang - numbing spicy soup - specialist that opened in March 2024 down a back alley off Akihabara Electric Town. Where most malatang shops let diners pick their own ingredients from a counter, JIN takes the opposite approach: the owner curates a fixed combination of more than a dozen ingredients - including domestic pork, large prawns, sausage, chicken meatballs, gyoza, koya-dofu, kikurage mushroom, cabbage, bean sprouts and glass noodles - to guarantee a balanced, repeatable bowl. The result is a tightly controlled flavour profile that has built a loyal following in a short time. The signature malatang comes in S, M and L sizes, with spice levels running from medium to extreme, and a non-spicy white-broth option for the heat-averse. A small S size still weighs in at 450g, while the kitchen advertises a 340-kcal lighter bowl for the health-conscious. The shop limits service to 50 bowls a day and closes once they sell out, so early arrival is wise. Ordering is via ticket machine: pick a size, pick a spice, and the kitchen does the rest. For a warming, glass-noodle-forward bowl with a genuine ma-la tingle in the heart of Akihabara, JIN Malatang is a quietly disciplined little shop worth the detour.
